All ingredients at room temperature (70-80 degrees F/ 21-27 degrees C). Taken from my Regal Kitchen Pro bread machine book. It is "light" only because it is not all whole wheat. Leave it in the machine or make it into rolls and bake in the oven.
The same as my other pumpkin custard but with eggs whites instead of whole eggs to reduce the fat and cholesterol. We eat this throughout the year - not just for Thanksgiving. It is a great source of vitamin A. Warm or chilled, topped with pecans or whipped topping (add the calories!), it makes a great snack or dessert.
This is the Del Monte recipe tweeked a bit. I bake this in a small casserole dish though you could put this in a pie shell.
A family favorite but left out the egg yolks and cut the sugar and shortening in half. Cookie is now more moist than chewy but still pretty darn good.
This is our version of a crustless pumpkin pie. All the goodness of pumpkin without the shortening and while flour in a crust.
