Trying to get my little one to gain some weight. With my lower calorie cooking, and her love of veggies, her weight has steadily lowered itself on the growth charts since introducing solid food, so I am trying to avoid "cookies, cake and ice cream" like her pediatrician suggested, and do it healthfully...
My little one started dropping off the growth charts once we started solids, so here's what I'm feeding her in the morning (after 12 months) to get more calories in. :) My doctor told me to give her "cookies, ice cream and cake!" As someone who has lost 100 pounds, no way am I going to program my baby to prefer junk food!
My sister's soup... we eat it once a week. Yum. You can do this in a slow cooker, or use canned beans, if in a hurry.
A yummy pasta salad that can be served hot or cold. Loaded with veggies, this can be served as a main meal, or halved for a side.
I got this 5-star recipe off the Food Network website, but had to tweak it a bit, as I didn't have bell peppers... I also omitted the olive oil and used brown rice vs breadcrumbs.
Redid EricaClay10's Brown Rice Meatloaf with what I had on hand, so wanted to get a correct calorie count. :o) I used Oatmeal instead of brown rice, because we were hungry & I didn't have time to make the rice first.
The only ingredients: bananas, a summer squash, oatmeal, olive oil egg and craisins. They are quite tasty & good for you, too!
They taste sinful, but are so good. These aren't "mini" cookies. I replaced most of the oil with pureed pineapple, and a bit of yogurt. They are soft, fluffy, and really good out of the oven. They taste good the next day, too. They are pretty "cake-like", and will not crumble after they cool off like most GF cookies. Good for school lunches, trips & picnics. :)
Made with gluten free all purpose, sorghum and millet flours, but can use whatever GF flour blend you prefer. Lightly sweetened. Yum! This is a LOT of dessert for 200 calories!
One of my favorite meals my grandma made. My kids love this. Not a "diet" food, but it's pretty yummy.

I changed her Poor Man's Meal up a bit to be a bit healthier by substituting hot dogs for sausage and using red potatoes and a sweet potato vs white. My dad makes fun of me and calls this "The Yuppie's Poor Man's Meal."

Chunky, herbed soup that I make once a week for my family. Serve with your favorite rolls. It's a family favorite.
I'm not good @ rolling enchiladas, so I find this method less time consuming, and it tastes the same, so why not. :)
A recipe I got off of AllRecipes that sounded good. Switched a few things out to make it less calories. I served it over a bed of sauted onions and bell peppers. it was really good!
I messed around with the recipe from the Martha White package & made it GFCF. They were good!
I took a 5 star black bean soup recipe from this site, used Pintos (ran out of black), added sausage and corn. Yum.
I was too lazy to roll the corn tortillas, so I layered the ingredients to make a "lasagne: instead
I took a family friend's recipe and made it healthier by using crushed pineapple instead of oil, whole wheat flour, and half the sugar. It came out really good! Your kids/tastebuds won't know these are fruit filled without much sugar!
I took the brown rice meatloaf recipe, and redid it with olives & capers & cilantro for a Spanish flavor. :) Reminds me of my grandma's cooking.
My kids LOVED it.
I sort of improvised pn this one, based off of a couple recipes I saw online, and with the items in my pantry. Easily adaptable for a crock pot.
I got this recipe off of AllRecipes.com, but added some buckwheat and flax for fiber and replaced the oil with applesauce.
I didn't want heavy cream in my soup, so I made it without... added chicken and a few other things...
My daughter is allergic to nuts, and all the GF recipes called for nuts... We also like less sugar than most recipes. The original called for 2/3 cup, so I halved it and added molasses.
We loved the chicken slow cooker stew, and an enchilada soup I found on here... I couldn't find them again, so I typed up my own. It was good!
I made Chili Mac one night, Ratatouille another... threw the leftovers in a crockpot so we wouldn't waste it...
We are learning about Ancient Persia, and supposedly, this was Alexander the Great's favorite food. The Persians pronounced Alexander "Iksender". Chicken in a tomato sauce, served over pitas or rice. Mmm.
Taken from this site's 5-star reviewed Chocolate Chip Pumpkin Cookies, but de-glutenedfor us out here who don't want/need it. :) Features 1/2 the sugar & Bob's Red Mill All Purpose Flour & buckwheat flour.
Nut free version of granola made with sunflower seed butter, instead!

This is a copy of the recipe on here called "Oatmeal Applesauce Low Fat Cookies ". I didn't use Splenda, and didn't have as much Craisins as it called for, and used regular sugar over brown, so I wanted to get a more accurate calorie count.
Yummy, filling soup. Great with a sandwich, muffin, or to hold you over until you can eat more. :)
Healthy mix of veggies, chicken and rice with skim milk. Tastes yummy and is LOW calorie!

I copied one of the SP recipes, but used what I had on hand. I wanted a more accurate calorie count.
I got this off of Allrecipes.com, but used Smart Balance instead of butter, and added some flax and whole wheat flour for more taste... (I would have used more if I had not run out!)
I wanted to make one of the recipes on SP without potato, but it wasn't as creamy as I wanted so I fixed it up this way.
A variation of a wheat roll that I really liked, but only had unbleached white flour on hand.

This is a super yummy treat I whipped up for my family & we ate it all up! Serves 8
Low calorie, healthy & yummy chicken soup. The added ginger soothes upset tummies. Goes well with a dinner roll.
Tomatoes, squash, eggplant & Italian spices over Whole wheat pasta. My kids love this recipe and ask for it all the time. Serves 6.
Homestyle cooking with a little kick! You can leave out the lemon juice, if you like... Or use another Campbell's Cream Of ___ Soup.
Makes FOUR 1 1/2 cup servings.
A nice way to enjoy your bounty of tomatoes, squash & eggplant from your garden! Makes 8 servings. (We eat the 4 servings, and eat the leftovers the next day.)
Yummy 115 calorie alternative to high-fat /calorie muffins. I added flax seed for an extra boost of Omega-3 fatty acids, and a little oil to help keep it from being too spongey (like so many low-fat muffins have.) You can use less (or more cinnamon/spices as you choose.) Makes 12 muffins or one loaf. (I like the muffins, so you can make sure you know your exact calories.)
I liked the idea of the other eggplant lasagne, but did not have the items on hand that she did so I had to calculate my own recipe. :) I also have so many eggplants and tomatoes from my garden, I needed to use them up!
I saw these on another website and wanted to make a few changes to their recipe. I added jalepenos to half of the batter for a yummy change. We had these with the Slow Cooker Chicken Taco Stew.
