Chilli Spice Chicken Curry (slow cooker or stove top)

This is a variation on a goan curry recipe. It is very hot and spicy so adjust the spices to your own taste and omit the jalapeno if you need to.

I also add a carrot, but this is just because I like some veg in my meals so feel free to remove this, or add spinach, aubergine etc.

Chicken Casserole

Preheat oven to 180 degree celcius (350 F).
Mix together flour, herbs and pepper (in a plastic food bag is a good idea).
Add diced turkey to the flour and coat thoroughly.
Heat 2 tbsp oil in a large pan or wok.
When hot, fry the turkey and make sure at least one to two tablespoons of the flour is also added to the pan.
Saute until browned.
Remove from the pan and place in casserole (or whichever large cooking pot with lid you are using.)
Add final 1 tbsp oil to the pan and saute vegetables.
When onion is translucent, add vegetables to the casserole.
Make stock using boling water (appx 3/4 pint)
Add to casserole and mix well.
Place casserole in oven and bake for 1 hour.

Easy to make and very tasty soup. Serve with chunky, warm bread.

If it wasn't enough that this soup is delicious, chillis and spinach both have blood pressure reducing properties. Spinach is up in the top 5 of the healthiest veggies to eat and one of the few which are better for you when boiled (as are carrots) making them perfect soup veg! It is also reported that there are Anti-Inflammatory and Anti-Cancer Benefits from Spinach Phytonutrients.

Zingy Smoothie, Dairy Free

Deliciously zingy smoothie for the morning or a pick me up during the day.

If you don't like it sharp, add a little more agave, but don't forget to add up the calories.

Chicken Liver Pate

Basic pate recipe using a small quantity of butter compared to most recipes and none on top as is usual.

Add a little salt to taste if required.

Mushroom and Pine Nut Spaghetti

Delicious, light lunch or entree with fresh, mediterranean flavors. Seasonings and herbs should be adjusted to your personal taste, however, be careful not to overpower the dish. It is meant to have delicious, subtle flavors and no flavor should dominate.

I have added this as a vegetarian dish but if you want to add some grilled chicken or fish, it would be delicious and very easy to do.
