A low carb option using Shiritaki yam noodles. My friend came up with this when were trying a low carb high protein diet. You can find these in some supermarkets and health food stores in Canada. Also Sambal Oelek is found in the asian section with Sirachi sauces.
I was just testing different things out and came up with this bread. It turned out great. The loaves are a bit smaller but light. You can substitute applesauce for the kiwi - I just happened to have some kiwis and no applesauce. Also add nuts of your choice - I had raw pumpkin seeds.

I got this recipe from recipezaar but made a few changes. To make it healthier, I substituted the shortening for applesauce, used wholewheat flour and added ground flax seed as well. I will give you the original with the applesauce included and you can add whatever you like!! YUMMY!
