By cutting the cheese portion in half, using 2% instead of regular cheese and using low carb tortillas, these tasty enchiladas are now absolutely wonderful and healthy!
This was a recipe that was so delicious, but needed to be taken down a few fat and calorie points. You can use fat free as well to cut it even more.

Yummy version of an old classic! You can use bone in chicken or chicken breasts, it's up to you! If you want to make it spicer use hot sausage or else mild/italian sausage is just as good. I found this recipe on recipezaar.
