These are the veggies that were left over from my veggie pizza tray that I took to the hockey party yesterday. It's kind of a "chili" day, so I figured 'might as well kill two birds with one stone!'
Slow cook the ingredients, DELICIOUS!
Add ingredients all at once, mix in a big bowl.
Just a little sweet and fall tasting way to have some low cal corn muffins!
Preheat oven to 375.
Mix 7 eggs, 7 egg whites, 1 cup of lowfat cheese, 2 pieces of turkey torn up into little pieces, mix with 1/2 cup of skim milk.
Use two cup liners, or grease your muffin tin.
Makes 12 muffins, can be saved in the fridge for a week or in the freezer for later!
Good way to get that protein in quickly in the morning.
REHEAT IN THE TOASTER OVEN for a quick breakfast or snack option!!! :)
Cook for 25-30 minutes, until firm and slightly browned.
