Vegetarian version of a tater tot (gem) casserole with no fake meats used.
Basic vegan lo mein recipe from the Fat Free Vegan site but I add half a vegetarian chicken-style roast, diced.
From Susan Voisin's Fat Free Vegan blog. I leave out the corriander from her recipe as I don't care for it, and I use Balsamic instead of red wine vinegar. Also I add the garlic right away, but I don't add the potatoes until 15 min before it's done or they get too soft.
McDougall recipe adapted by adding onion and green or red pepper. Quick, easy and delicious. I get 3 serves, but you could get 4 smaller serves.
