Adding a whole can of tomato paste makes this a very thick chili which the boyfriend really likes. However if you like a thinner chili just add less, obviously, lol.
Also the kidney beans were ones I cooked from dried beans and the black beans were from a can. But one can of kidney beans would be about the same amount.
Also the sweet peppers were the little red, yellow and orange peppers that come in the plastic container (like berries or cherry tomatoes). They were cheaper than buying three bell peppers.
This was inspired by Giada De Laurentiis's Greek Caponata, but I used what ingredients I had on hand. You can see the original recipe at foodnetwork.com.
I also like to grate a little mozzerella over the top, but I didn't include that in the calorie count.
Oh, and prep time depends how fast you chop your veggies. lol
