This chicken is literally falling off the bone when it's finished. It's supposed to mimic the taste of rotisserie chicken.
My husband and I made this modified version of an old favorite with less salt than most recipes require. There are only two of us so there were plenty of leftovers. The potatoes get soaked in the juices from the chicken, so you may want to rinse them off before eating unless you want some extra chicken fat! You can leave the potatoes out and just substitute balled up aluminum foil in the bottom to avoid this.
