Agreat summer solution to cole slaw. Light and refreshing...Avocado provides some creaminess.
My family enjoys this side dish. You can play with the seasonings to adjust to taste or I find fresh herbs in the summer are great!!
Baked asparagus can replace fries with your meal. I season with sea salt, pepper and garlic powder but seasoning should be adjusted to taste.
This makes a great side dish. Saute some chichken breast and add in to make a great main dish.
This version uses whole wheat spaghetti (I did not have Soba noodles on hand) These are good sized portions using 2oz of dry pasta (about 1 cup cooked) per serving with a lot of vegies as well!
This makes about 10 (3 oz) servings of beef. Left overs make a great meal on their own or can be tranfsormed into many other recipes.
