Homemade Chicken Nuggets w/ Spinach & Ground Flax

Homemade nuggets are the best way to know what is in your food! I sneak flax and spinach into mine... but these can be adapted to suit any taste! I will also try these with whole wheat bread crumbs to make them even healthier... I just used what I had on hand.

Banana, Peanut Butter, Cocoa muffins

pretty much everything I had on hand for a run-out-the-door breakfast option. The applesauce I used was motts naturals blueberry, 2 4oz servings.

Slow Cooker Italian Chicken Florentine

Based off of McCormick's Slow Cookers Italian Chicken recipe.
This is placed over baby spinach to give it lots of nutrients!
Great for left-over lunches too!

Chicken Soong

I had this at a local chinese restaraunt which didn't supply their nutritional information. I found this recipe online so I could get something into my tracker for this meal. This one looked pretty close. Good alternative to the heavier items on the menu. NOTE - The recipe called for 2 cups of vegetable oil for cooking. I omitted that from this recipe and instead used cooking spray. I also omitted pine nuts, as my meal didn't include that.

You can use whatever frozen fruit you have in the freezer.

Slow Cooker Peppery Beef Stroganoff
