"Lightened", healthier version of a family favorite. Add a tossed salad for a great Italian feast!
Adapted from recipe of same name in "501 Delicious Heart Healthy Recipe" cookbook
About 5 oz chicken/serving
Black rice is a short grain rice, nutty and chewy in texture, and inky black in color. Mixed with colorful vegetables, this makes a wonderful summer salad.
Modification of recipe from "501 Heart Healthy Recipes" (use Splenda instead of sugar)

I'm always looking for ways to use different vegetables and this is a recipe that uses both leeks and fennel, in addition to the more classic vegetables. Water can be used in place of the chicken stock for a vegetarian dish and wine is a nice ingredient, but not essential to the soup. I just like the taste of wine! Fresh herbs can be used in place of dried, if you are lucky enough to have them.
Use fresh fall apples in this wonderful fall weekend breakfast treat! (Makes a great snack if balance of batter is made up and frozen!)
