This is a base recipe that can be altered to emulate different styles of cooking just by changing the seasonings used. I have made it in Italian, Mexican, and Middle Eastern or Greek versions.
I discovered this way to cook eggs when we stayed at a studio timeshare that only had a microwave. Now it is one of our favorite egg dishes. Can be done with real eggs also, or a combination.
Trader Joe's Pumpkin Ravioli is only available at holiday time, so I buy extra and freeze it. This is my own concoction, unusual perhaps but very tasty. Butternut squash ravioli is more available and would work also.
From the Pink Ribbon Cookbook, with my own modifications. My husband loves this, including the leftovers. And it is very filling.
Vegetarian, very flavorful and filling. Good served with Cilantro Brown Rice.
Best to prep most all vegetables before starting to cook.
Original recipe was 444 calories and 17 grams of fat. By substituting with whole wheat bread, splenda, egg substitute, fat free milk, it is 210 calories and 5.1 grams of fat.
From the Pink Ribbon Diet but slightly modified. Quick, easy, and my husband loves it.
I sometimes use garbanzos instead of black beans. Ancho chili powder isn't necessary but adds a nice touch.
Leaving some juice from the cans of beans and the green chilis adds flavor to the stew.
This is a thick and hearty chili with lots of veggies.
This is one of many possible variations. I use whatever fruit is available; apples add a nice crunch. Substitute dried cranberries for raisins is good too.
Very lemony with very tender chicken. You can actually eat all of the lemon slices because they stew and become very tender also. Cooking eliminates nearly all of the bitterness in the peel. Can be made in advance and left to stew on low heat.
