This is an easily adaptable casserole. You can use pretty much any time of hash brown potatoes as a base, mix up the veggies, and adjust the number of eggs based on your tastes.
This is a really basic whole wheat pancake recipe that can be easily adapted with different fruit or spice add-ins.
I had a lot of various veggies that needed to be eaten before they went bad, and so you have it.
I was craving shrimp fried rice. I was out of rice but had some quinoa on hand and decided to give it a try.
This is a fairly quick and simple recipe, and like any fried rice, you can customize it with your favorite meats and veggies.
