Chicken, Quinoa and Black Beans- protein powerhouse!
I love eggplant and asparagus, so am always trying to find a way to combine them. I could only get 3 on the plate for the pic. Based on the farily decent calorie count, you can pair this with a nice side dish of pasta tossed in EVOO and spices!
I use a large muffin tin rather than the smaller ones used for cupcakes. Ingredients listed here make 6 nice large mini meatloafs. The feta cheese, spinach and mushrooms create a wonderful mix of flavor.
