Grandma's Gumbo (Healthy Version)

Making a good gumbo is an art, it takes a lot of time and patience, but it is worth it!
This is a recipe I got from my Cajun-French grandmother (nothing better than from the bayou). The only adaptations I have made were to omit the fat from the roux preparations, eliminate the extra salt (with all the natural flavor of this recipe, it really wasn't needed), and to leave out the shrimp (which I do miss, but can't have due to the cholesterol).

My grandma never did use okra, only roux, but if you'd like to add okra, use frozen to prevent slime or deslime prior to using for recipe.

Tuna Salad Stuffed Sweet Red Peppers

Quick & Healthy No-Cook Lunch. (Great for days when you think about giving in to your inner "fast food junkie")

Calzone / Empanada

This is a lower calorie, lower sodium version of "Tex Mex Calzones (Chef Meg's Makeover) Recipe", and uses AZIAS_MOMMY's Whole Wheat Thin Crust Pizza Dough.
I loved the recipe, but needed it to fit my special dietary needs.

Garden Omelet

Yummy breakfast @ only 150 Calories with all the food groups except grain, which is easily cured with a side of whole wheat toast. This omelet is the equivalent of a 2 egg omelet.

Healthy Jambalaya

This Jambalaya is lower on fat and sodium than most others. Due to an oversight, I had not added the tomatoes to the recipe. This has been corrected. The tomatoes used are petite diced with no added salt. If you use other than this you will need to account for the extra sodium.

White bean sauce with spinach & tomatoes over Linguine

This is a variation of a Recipe submitted by SparkPeople user TWINMOM143 - Skillet white beans, spinach, & tomatoes

I personally do not like the texture of beans over pasta, so I turned the beans into a sauce. I also used fresh tomatoes instead of canned.

Try these homemade BAKED Spiral Spuds.
I personally use them as a "side" for our dinner rather than as a snack, but you could do either.

Power Breakfast Cookies

This recipe was adapted from "The Sneaky Chef : How to Cheat on Your Man (In the Kitchen)". I use Splenda Blend Brown Sugar, whole wheat flour, and Egg Beaters instead of Eggs to make them even healthier.
These are still deceptively delicious and have no cholesterol!
These are good enough to be a snack or dessert, but healthy enough to be breakfast on the go... and they are healthier than most of those instant breakfast bars you can find at the store!

Yummy Yogurt Sauce

Great on Sweet Potato Fries, Fresh Veggies, etc. Instead of high calorie or fatty dips.

Seasoned Chicken & Brown Rice

Though the title isn't overly appetizing, the dish is delicious. Even picky kids like this one.

Slow Cooker Chicken Enchiladas

An all-in-one dish you don't have to slave over all day to make it taste like you did!

This meal is not exceedingly low in calories, but it does have ALL the food groups in this dish, so you do not need to eat additional food to have a full meal.

My family has some Cajun-French background, so we tend to like things a little spicier than most, adjust seasonings to suit your palate.

Homemade Boneless Buffalo Wings
