I just mixed this all together for dinner one night, and it's pretty good! I spooned it onto sliced bread, but I think it would be really good stuffed into a pita.
I made this up on the fly just to use up some things I had lying around, and it turned out really tasty!! (I really love cooked carrots!)
This isn't my recipe. I found it on sparkrecipes.com but revised it to reflect the serving size (1 cup) I use so my meal planner will be correct.
This is easy and can be eaten as a side dish or main dish. If I'm making it as a main dish I sometimes add chicken, low fat salami or feta cheese (all not included in the calorie count).
I prefer to make it the night before and let it sit in the fridge overnight to allow the pasta to soak up all the flavors.
I have been putting off grocery shopping for awhile, so I threw all this together for a quick dinner. Yum! I love walnuts, so they make almost anything taste great to me. The fat is a little high due to the nuts but it's good fat.
*If you're watching your salt I did not include the garlic salt in the nutritional calculation, so add that separately based on how much you use.
I love pumpkin pie lattes from coffee shops, but I got sick of paying $4 a cup. So I decided to throw these 2 ingredients together and it's pretty yummy! You could also try adding nutmeg or cinnamon or any other spice if you like. It's not really a "recipe" but I thought I'd share it.
