Yummy vegetarian meal!
Yummy Zucchini Bread but NOT diet. Ingredients can be modified to be less caloric.
I've been making this for over 20 years. My family LOVES it. I used fresh zucchini and carrots from our garden. It's a definite favorite item in our family. It's NOT diet, but the vegetables are good for you! You can modify to be healthier.
This is a recipe from Allrecipes.com that I made some modifications to. Omitted green pepper, celery and salt. Changed bread crumbs to Cheerios, used 1 cup half and half with 2 cups water instead of 3 cups milk., used red potatoes instead of regular potatoes, and changed a few measures on the ingredients.
