This recipe is from the Eat-Clean Diet Recharged book and I found it online. It's full of flavor, filling, and can be varied in many ways, depending on what vegetables you add. For a spicier dish, I add a couple of diced serrano peppers. For more nutrients, add bok choy, napa cabbage or other greens.
I have a sweet tooth and this recipe hits the spot! I make it with lemon pudding mix for a slightly tart, refreshing summer treat. It's really great topped with fresh picked berries! Nutritional info calculated without the berries.
