My Gram used to make this for me when I was younger. I made it healthier so I can eat it more often now. I made this with what I had on hand, so with substitutions you may even be able to make it a little lighter!
I needed to clean out the fridge, so I blended a couple recipes and came up with this healthy and comforting soup Vegetarian, but could be made vegan by substituting or eliminating the milk.
Very Yummy and quick! Reduced/non fat cheeses can be substituted as well as turkey bacon to bring down fat and calories
A little high on calories, but really good. Turkey bacon can be substituted. Can also be done in the crockpot.

These are so yummy. Be sure to make them a day ahead and refrigerate, they taste better that way.
My family requests this every week.... Leftovers are great, and recipe can be doubled and frozen.
