A wonderful dressing for a rice based salad with grapes, apples, chicken, nuts, and/or dried fruit.
Tasty, healthy, and a great way to use overripe bananas!!
Makes 12 muffins.
Recipe based on one found in Eating Well magazine (October 2009 Issue). I added some pearl onions, new potatoes, and garlic cloves. Get creative!
These are wonderful additions to a spinach salad with mango and a simple balsamic vinaigrette. This salad is simple and a crowd pleaser. Of course, the pecans are yummy by themselves.
This is a great salad topper. . .high in protein and fiber. Add your own dressing. A lemon and olive oil vinagrette is good!
Perfect for a summer BBQ! Use grilled corn cut from the cob if possible!
