My Meatloaf recipe
Mix all ingredients in a blender puree to smooth texture. Set in freezer for 20 minutes. Then pour into ice cream maker and blend for about 45 minutes. (On occasion I throw a banana into the blend because I like them.)
My Gumbo is very heavy on vegetables. I love them and I probably put more than the measurements I give here. It's a personal preference.
This is an Ethiopian dish that I have when I eat out. It is a mixture of collards and beef. There is an ingredient I could not add here called Niter Kebbah which is a seasoned butter. I just say unsalted butter but there is a separate recipe for the Niter Kebbah.
Niter kibbeh is a ubiquitous cooking medium in Ethiopian cuisine. It adds an incomparable flavor to dishes. However, if you like you can substitute oil or butter or a combination of oil and butter. Clarified butter is best. NOTE: This is a seasoning..not a stand alone recipe. It is divided into other recipes.
This is a satisfying dinner that is easily prepared in about 45 minutes. I'm sure it could be done in a crockpot as well.
This is a low fat lasagna recipe, modified w/low fat cheeses, and the leanest hamburger 93%. I would not eat this on a normal night. This is a cheat night meal even with the lower fat ingredients.
I modified a Spanish rice recipe found here and substituted ground beef with chicken breast.
