Good for eating by itself, or on tortillas as burrito filling....
The key to this salad lies in the preparation of the macaroni with the lemon juice and oil. Also, vegetables should be chopped fine, so that each bite contains a variety of the flavors.
I came up with this recipe when I was trying to make a tasty sauce with a nutritional punch to it. My family loved it! Since my husband doesn't like mushrooms, I ran them through the salad shooter to grind them up, just as I shredded the squash and carrots. You could leave chunks, or shred any vegetables your family would balk at.
I modified a recipe from my cookbook, inadvertantly leaving out the melted butter. From the compliments I received from our dinner guests, nobody missed the fat!
My husband and daughter raved about this easy to prepare layered meal. You could make it lower fat by using low-fat cheese instead of the colby, or spice it up with added green chile peppers or jalpeņo peppers.
