Gluten free simple to prepare PNB & Choc Chip Cookies
Great for summer or anytime and requires no baking! Woo Hoo!
Simple mixture, just honey & mustard - why buy honey/mustard dressing/dips/glazes at the store which is loaded with preservatives and unnecessary calories.....
Delicious and simple to prepare. A little acidic although with salad, veggies, or use it to bake chicken it blends nicely.

Use any brand for the ingredients or fresh

Preheat oven to 350 (I used a toaster oven). Mix honey, sugar, earth balance/butter, peanut butter, H2O, and vanilla in medium bowl until smooth/creamy.
Mix flours (not sifted) and baking soda, blend into above mixture.
Blend in chocolate chips.
Use teaspoons to drop preferred size cookie on sprayed (used canola oil spray from Trader Joe’s) sheet/pan.
Bake for 7-10 minutes.
Cool on parchment paper before tasting this yummy delight.
Yield: depends on cookie size, if bite sized; 6 dozen
