This is a nice low calorie substitute for the high calorie chili rellenos.
Great soup. More like a stew. Full of vegetables.
If you are not a buttermilk drinker, buy the dried buttermilk in the baking aisle and make as little or as much as you like.
This recipe is done completely in the microwave and is super quick to prepare. It is a really hearty meal. I serve it over mashed potatoes or rice with a nice vegetable salad on the side.
