A french countryside favorite in the summer! Goes well with lamb or as a tapas offering.
Always made to celebrate the lavender harvest at our house! Awesome accompaniment to salad or with tea/coffee for a snack. Delicate and tasty!
Whipped this up for a make ahead meal for a night when time was tight. Add your favorite southwestern seasonings to pump up the flavor.
Top with crumbled tortilla chips and fresh cilantro.
This is a Middle Eastern - Mediterranean style recipe... EASY!
Serve with saffron rice, figs, apricots, cukes in yogurt and you have a feast!
Had this combo at the infamous PI Pizzaria in St. Louis and was determined to come up with my own healthier version. I was also feeling rather adventurous to make this on the grill... wow! Especially if you are able to have wood chips in the fire. Double wow!
The crust is hearty (similar dough to soda biscuit) and crisp. I came up with it in desperation when I realized my Pillsbury pizza dough was missing from the fridge!
A great alternative to the higher calorie "Ramen Noodle" Salads... But more tasty and just as quick to whip up! This is a great entree salad for summer time dinners or to serve along side of other healthy Asian inspired sides for a themed meal.
I was dreaming of the Mediterranean summer when I concocted this recipe!
This is a colorful healthful way to stretch chicken and get lots of great veggies into your meal. Serve with your favorite brown rice, bulgar or barley for side and you have an entire meal!
I am one that loves gooey warm bread puddings of all kinds... this is a recipe I came up with to quell a hankering on a rainy Sunday. It uses pantry items you probably have in hand and though it is light you can make it gooey by drizzling the warm "pudding" with Smucker's Fat Free Sugar Free Caramel Syrup (but add the calories to your final count).
The house will smell so good when you make these!!
Best to use silken tofu but others work just the same.
Very light lemon flavor.
Use for domals (stuffed grape leaves), vegetables such as artichokes/asparagus, or on baked potatoes.
Makes 10 half cup servings
Can be served alone or as topping for fish, chicken, or steak; or serve with chips.
One of my ol' time favorites from the Milwaukee East side landmark Beans 'n Barley restaurant. An delightfully unusual salad to accompany any meal.
This is the recipe for the pilaf served by the infamous Zorba's restaurant at Milwaukee Summerfest.
I love the tasty flavors of the Mediterranean and it's oh so healthy for you! This is a nice dish to make for company and share with a cuke salad, crusty bread and a good wine! Yummm!
My husband's mom made this faithfully each year for his birthday from the time he was old enough to remember. I continue the tradition for her and the entire family looks forward to January 12th each year!
This is a light and fluffy dessert.
Warm and very satisfying for a cold winter evening or as a change of pace from spaghetti.
A light lunch or dinner entree salad that is easy to throw together, looks absolutely lovely and tastes so Mediterranean. What a wonderful alternative to the heavier mayo or creamy tuna salads of old!
*You can use common sense substitutions to pull this together with what you have in your fridge or pantry.
Low carb and low calorie cheese fondue option with surprisingly rich traditional flavor... Same tradition applies: you drop your dipper into the fondue, you kiss the person to your left!
Traditional cheese fondue perfect for holiday gatherings or to make any winter evening special! Remember, if you drop your dipper into the pot you must kiss the person to your left!!! No excuses.
A favorite for gift giving... or in our family, for care package to our soldier in Iraq!
Easy to prepare. A great family activity!
Using up my Thanksgiving left over Turkey and "Healthy Stuffing" to make cute little "balls" for lunch or light dinner entree
Light, colorful soup packed with protein and fiber. Great to soup recipe for company or kids... let each person garnish their own. My kids' favorite soup any time of year!
I had these at a Greek restaurant years ago; they've been my favorite any time of year. In summer I love using fresh beans from my garden. Off season I use frozen French cut beans (1 bag = approx 4 c)
Our family's favorite holiday cookie... I haven't the heart to try to reduce the calories. Just have to use restraint when partaking in these fabulous cookies!!
Easy, easy, easy to make light and tasty cookies. Vary the flavor of cake mix to your taste or needs.
My special creation: A cheery tasty way to brighten up oatmeal any season! The combination of cranberry, orange and spices is out of this world and your tummy will be satisfied for hours.
Sounds strange but it is rich and so sinfully delightful!!
Vitamin packed.
THIS RECIPE IS FROM ONE OF MOM's OLD BOOKS
NOT my personal creation!! But we LOVE it and you will too! Orzo makes a satisfying change from rice.
There is nothing quite like this spicy sausage stew to warm the insides on blustery days. Serve with warm crusty bread or rolls for a hearty easy meal.
