This is what I make instead of lasagna. I used to put a layer of cottage cheese in it, but have cut that out to reduce fat and calories.
I love Great Northern beans, so occasionally I'll open up a can, throw in some ham and eat it just like that. This time I added a few more ingredients to make it even better.
I just threw this together one night for supper. It has a different combination of ingredients than I've used together before, but it turned out suprisingly good. A very hearty and healthy meal.
Loaded with good stuff: whole wheat, oat bran, flax, zucchini, carrots, apple, craisins, walnuts, and pecans!
These muffins are loaded with whole grains, fruits, and vegetables! This is a slightly different version of my Healthy Breakfast Muffins. This recipe made 32 regular sized muffins. Depending on how full you fill the muffin cups, I'd say you should get 28 - 32 muffins. Nutritional value is calculated on 30 servings (1 muffin = 1 serving).
