My husband hates guacamole but he LOVES my guacamole! This is a very fresh tasting, light guacamole that is great served with your favorite chips, crackers, pita or even fresh veggies. It's also awesome in tacos or atop taco salad.

This dip is requested regularly by friends, we bring it to every event/potluck/etc. It originated with full fat ingredients but really doesn't lose much by substituting lower fat products. I personally don't like fat free dairy products but you could use fat free cheese and sour cream, if you prefer.

This is chili using the trimmings from a whole beef tenderloin that has been trimmed up for filets. It's about 1 - 1 1/2 lbs of meat (I trim off the majority of the fat but do leave some on for flavor).
My mom's potato salad, lighted up using greek yogurt and olive oil mayo instead of the full-fat stuff.
From Taste of Home Comfort Food Diet Cookbook - we made this tonight and it was really tasty and filling. The recipe called for 3 medium peeled potatoes but all I had was small red potatoes, so I used 6. I left the skin on them, since the red potatoes have a pretty thin skin. It was delicious - my kids gobbled it up!

Yummy fresh fruit salsa to serve one of a thousand ways...with baked cinnamon sugar tortilla chips, cinnamon raisin bagel chips, graham crackers, in yogurt, over low-fat ice cream, etc.
Threw this together last night to satisfy a craving for asparagus.
