Sweet and Savory--A great Fall or Winter meal with a corn muffin

Vegetable Beef Barley Soup

A savory classic. To make a beefier version use 3 pounds of beef.

My try at Thai

can of chicken broth
can of vegetable stock
1/2 cup coconut milk
5 thin chopped slices ginger
1 T red curry paste
1 T brown sugar
simmer together, then add carrots (thin, diagonally sliced), thin sliced cabbage, mushrooms and shrimp.
Simmer for 5-10 minutes then whip eggs and add while stirring quickly.

Crockpot lasagna with beef and zucchini.

Cook burger and crumble.
Finely shred zucchini
Mix meat, zuke and 2 cups sauce. (Oops I used 2 kinds because that was what I had in fridge.)
Spray pot with oil.
Spread 1/4 cup sauce in bottom.
Break 2 uncooked lasagna noodles to fit bottom of pot.
Mix cheeses and spread 1/2 mixture on noodles
Spread 1/2 beef mixture on cheese.
Repeat with noodles, cheese, beef.
Top with noodles and Marinara sauce.
Cook on low for 4.5-5 hours.
Serve with extra sauce.
