This soup is a favorite in the family. Add a different green or several for a new 'kick' to the soup. Especially good with warm whole grain bread on the side.
This is a very simple stock that is great to keep on hand for soups and stews. I use my 6 quart slow-cooker and allow it to simmer. If you are using a smaller slow-cooker I suggest cutting back slightly on the amounts of the ingredients in proportion
Soothing and delicious, this soup seems to revive me right from the first spoonful. I find this easiest to cook in a slow cooker and allow to simmer all day
