This is a creamy coconut milk based treat that is sugar-free, yet plenty-sweet. I always have a can or two of coconut milk in the fridge, that way if I need to make a quick ice cream or whipped cream I don’t have to wait for the milk to chill. If you’re making this ice cream with room temperature coconut milk, the ice cream mixture will probably need to chill in the fridge for a couple of hours instead of just one.

er I invite guests over during the summer, I serve plenty of guacamole because it's so popular! Many friends have told me that their guacamole is not nearly as tasty and I think I know what the trouble is: Make sure that your avocados are completely ripe before cutting them open. Press the skin of the avocado, it should give slightly, the same way when you squeeze an orange. I buy mine 2-3 days before my party and store them on the windowsill. If your guacamole tastes bland it might need more lime juice and salt, taste as you mix.

As easy as it is to make vegan gravy, it’s just as easy to make gluten-free gravy–and they taste equally delicious! Although one of the main ingredients of gravy–wheat flour–is not suitable for gluten-free folks, substitutes are easy to come by. While I use chickpea flour (available in the bulk or pre-packaged section of your local natural foods co-op), you could substitute the Red Mill all-purpose gluten-free flour or rice flour. Chickpea flour thickens better than the other two, but any kind of gluten-free flour would probably work.
Changed up the recipe on the back of the arborio rice package. I have used organic Lemonade mixed with water in place of chicken broth.
