This is a favorite of mine. I eliminated the potatoes and peas and added cauliflower and green bell pepper. It is delish! I had this with cooked butternut squash but you can have it with brown rice or just a green salad.

Omelet with bacon, onion, tomato, mushroom, pepper

This makes a nice breakfast or a supper dish with a tossed salad. I sometimes change it up by adding spinach or broccoli. Substitute diced ham instead of bacon. Add herbs or use parmesan cheese instead of the cheddar.

This is a variation on my Chock Full of Vegies Soup, basically I didn't have all of the ingredients and decided to make do with what I had on hand. So here it is!

My fast and easy chili

I wanted a savory, low-fat, good tasting chili to throw into the crockpot on a cool rainy day. I looked through my cupboards and this is it! It's fast and easy not because of the cooking time but because its fast to put together in the crockpot.

Like All Day Beef Stew, but I subbed out the wild rice and almonds and used less beef. I added potatoes and dry beans to boost protein and fiber. I had a hard time finding a decently priced piece of meat at the store. The original recipe uses2 lbs. of round steak. I used 1.5 lbs chuck steak for this. It has more calories but it is more economical and

Mexican cornbread

Very savory flavor and crispy crust on this cornbread. I bake it in my large iron skillet.

I could only find regular yellow cornmeal in the online ingredient list. But I use the stone ground yellow cornmeal from Hodgson's Mill. Has more fiber than what is listed.

Turkey Chili

Lots of flavor, easy to make. I couldn't find the chili mix in the ingredient list online so it is not calculated into the calories but 1 envelope of spice club chili seasoning mix is 100 calories. Divide that between the number of servings to get an accurate calorie count.

Fresh fruit salad

I just needed to find out the calorie total for a salad like this. I love to cut up my fruit and make a salad to have with plain yogurt.

Italian meatballs

This makes 20 large meatballs, perfect to serve with spaghetti and sauce or for sub sandwiches. Serving = 2 meatballs.

Chock full of veggies Cabbage soup

Very delicious soup. Very versatile. You can make this with stewed tomatoes, or v-8 juice or veggie broth instead of chicken broth. You can eat this every day and never get bored simply by changing things up a little. Vary the seasonings. Add chili powder and kidney beans, or try adding a little pasta and some leftover beef chunks and italian seasoning for a minestrone. Let your imagination be your guide.

Fast and easy to put together. Tasty clam dish.

Bulgur wheat salad

A wonderful combo of bulgur wheat, black beans, chick peas and fresh herbs and veggies to make a great side dish or meal in itself.

Mini Turkey loaves

A friend gave me this recipe and with a few modifications, my family loves this. It is fast and easy.

Sambar Lentils

This is a wonderful Indian soup to serve with roti, rice, quinoa or tortillas.

I used about 4 tsp of sambar seasoning that you can find at an Asian market.

Roti #2 (lighter)

A slightly lighter version. Half the oil and more servings makes each roti fewer calories.
I use whole wheat white flour by King Arthur.

chicken, chick pea, and spinach curry

This is a family favorite. I also added garam masala to this but couldn't find it in the ingredient drop-down list in the recipe builder.
Serve this with roti or rice.

Roti

Mix all together. Kneed for about 8 minutes or until smooth and elastic. Cover and let rest for about 30 minutes. Divide dough into 8 equal parts. Roll as thin as you can on a floured surface. Heat a cast iron griddle on high. Place each roti on the hot griddle and fry for about 30 seconds on each side.
