Low-Fat White-Meat Chicken Tamale Pie

This is an alteration of another recipe I found here on SparkPeople, but that one had a little more fat and less fiber, and used a different method for cooking the filling. This is a great, fun recipe for families or potlucks, and a staple in our house.

Very Light Thai Chicken Noodle Salad

Delicious Cold Noodle Salad. I make it for dinner, then pack extra servings up for lunches that don't need heating. Adapted slightly from a recipe at Cate's World Kitchen Blog.

Turkey Pastitsio

This is a delicious Greek casserole, perfect for fall or winter weather. Ordinarily made with beef and regular pasta, and relatively high in fat, I use turkey instead and whole wheat pasta, in order to improve the nutrition. The taste is pretty much the same!

Eggplant Risotto: Made in two separate dishes. Delicious as a vegetarian main dish, or as a side.

Roasted Eggplant Soup, Chilled or Warm

This is a recipe I adapted from a Bon Apetit recipe. It's delicious chilled to accompany a summer meal, or warm with bread and salad as a meal of its own.

Scaled down cookie recipe to decrease the danger. Still not as good for you as some other choices, but a more reasonable treat choice all the same.

Primavera Sauce

Good on pasta, but works equally well on some meats. A good go-to, healthy, throw in what you have tomato sauce. Also delicious!

Quinoa and Barley Breakfast Porridge

My husband hates oatmeal, and this is a good, high fiber, high protein alternative. Can also mix up a big batch either on the stove or the crockpot and eat all week. Add whatever toppings you want to it: they're not included in the recipe calculation

Curry Turkey, Improvised

A delicious and spicy addition to my repertoire of how to cook chicken or turkey breasts. Nutritional facts based on turkey, but works equally well with chicken.

Quinoa is a very high-protein, high-fiber, mineral-rich replacement for rice. It's available in many health food stores, or the health food section of supermarkets. For people looking to try Quinoa, this is a good way to do it.

This stir fry uses Quinoa as a replacement for rice, and along with the beef and broccoli, is a very high-fiber and high-protein meal. It's also very tasty. Quinoa has a nutty flavor.

Some people may prefer to omit the bouillon and just use water to reduce sodium.
