I've modified this from a Campbell's Soup recipe. I didn't cover the dish the first time and the rice didn't cook in 45 minutes so I had to cook another 20 minutes. I'm going to try this in the slow cooker next round.
Tasty, simple and easy to modify. Great with multigrain Tostitos.
This is the light version of an amazing fruit dip recipe. I'm allowing approximately 4 tablespoons per serving, or 20 servings per batch.
This is a healthier version of the macaroni with mushroom soup and ground beef I used to make my son when he was younger.
This is the low calorie version of the original (family) recipe. I used Non-Fat Miracle Whip which I find rather sweet for my taste. Low Fat Mayonnaise could be substituted for the Miracle Whip, but add 17 calories, 4 grams of fat and subtract 2.5 grams of carbs per tablespoon. The dip part of this recipe (not listed) adds dill weed.
Note: pickle juice doesn't exactly show up on the nutrition values :) so I added vinegar to the calculations, but the sodium will show short.
