Split Pea Soup

Quick and easy soup that's FAT FREE! Yummy split peas are good for you! :)

Blueberry Oatmeal Mini Muffins

I make this in a mini muffin tin and they are the perfect snack size (when paired with a piece of seasonal fruit or a yogurt). You can also make this regular size, but you will need to increase the baking time by about 5 minutes. Enjoy!

Peanut Butter Mini Cupcakes

These are yummy little bits that you can sprinkle with mini chocolate chips before you bake (chocolate chips are not included in the nutritional information). Great snacks for the kids with sliced apple on the side. :)

Portabella Mushroom Bake

This is a super yummy dish that I save for special occasions! You should use 4 large portobello mushrooms, but I didn't know how to do that in the nutritional calculations. :) We like to double the sauce and add some sliced button mushrooms and some small crimini mushrooms as well. It's yummy served over rice. :) Enjoy!

Dried Chickpeas

Each serving is 1/2 cup. great for snacking on instead of chips etc.

Herbed Carrot Soup

Quick and easy soup. We like to have some veggies left in the soup, instead of puree the entire thing. Simply reserve some zucchini and onions, carrots and potato chunks.
