Ham Salad Appetizers

This is a great way to use the odd pieces of ham from a spiral sliced holiday ham.

A local sandwich shop had a ham spread that we loved. To save money, we came up with our own recipe for the ham spread. In order to make this more figure friendly, we use celery instead of making sandwiches. However, if you have calories to spend, you could use whole wheat bread and make sandwiches.

Hobo Chicken: An Envelope Meal

This is the one complete meal my teenage son can fix, independently. In fact, my entire family loves to make this meal. Everyone washes hands, then proceeds to add the ingredients that he or she likes, and omit the ingredients not desired. I have the vegetables washed and chopped, and each family member makes their own creations. Some even add a dash of paprika for color. After all the aluminum foil envelopes are created, we simply write the chef's name (using a Sanford Sharpie marker) on the outside of his or her masterpiece.
