Coddled Egg with Leek Sauce and Cheese - serving 4
A coddled egg should offer a soft center and in french, "oeuf mollet", "mollet" means soft. The option for this menu was to cook the eggs slightly longer for a more solid yolk.
SAUCE: The sauce is delicious. It may be used with other dishes, such as the King Clip Fillets (not unlike Grouper) which we will have tonight.
So filled with flavor, your meat lover will never guess there is no meat added.
A wonderful fish dinner with rich citrusy flavor
Served with lemony asparagus spears and mashed butternut squash. The nutritional calcs. include the asparagus and squash
Using Reduced Fat Ritz Crackers, this fish dish is an easy way to get lots of protein and little fat. Omega oils are abundant!
I have used 4 pcs. (4 oz) each of Tilapia. However, that is a pretty healthy serving. You can use 1 pc., cut it in half and follow the same directions.
It was a last minute thought... baked eggplant. I didn't have time to slice, salt and let sit for 30 minutes so I just hoped for the best. Typically, letting eggplant sit salted for 30 min. removes bitterness.
If you use Gluten Free Brown Rice Baking Mix, these turn into great gluten free, wheat free treat
