Vegan Moroko (Spinach and Potato)

A veganized version of a potato and greens dish from Southern Africa. The original version calls for chicken broth. I have substituted vegetable boullion. The spinach could be replaced with any other green you may prefer.

Chapati are a round, flat, unleavened bread popular in India and East Africa. They are traditionally served with soup, stew or curries.
