Fresh summer fruits mixed in a blender.

Butternut Squash Soup

In a large saucepan over medium heat, warm the olive oil. Add the onion and saute until soft and translucent, about 7 mins. Stir in the garlic and thyme, and cook for 30 seconds. Add the butternut squash puree and chicken broth, and season with salt and pepper to taste. Bring the soup to a boil, then reduce the heat to medium-low and simmer for 10 mins. Stir in the half and half, and serve immediately.
