This is my version of Vegetable Stir Fry. It is delicious and nutricious if made correctly. To follow my directions, the past must not be dry. Otherwise you must prepare your noodles while cooking the vegetables.
This is a great Vegan dish and I love it. Add your favorite dairy free dressing and it is so good even the kids will eat it.
I always loved Mama's whipped potatoes at Christmas time. Now I make them much lower in calories and my fmaily loves them!
This is a good alternative to boxed macaroni and cheese. The only problem I see is the high sodium.

I have been making this for years and granted the calories and fats are higher, I make this recipe when the rest of my day has been pretty low calorie and it goes great with some whole wheat french bread and a green salad! The kids love it!
