This is a faux potato salad, using cauliflower for those seeking delicious "potato salad without all the sugars/carbs.
My kids love Cracker Barrel's Chicken & Dumplings - they always clean their plates so this is my attempt at a lower fat version.
I am always struggling to get my kids to eat their vegetables, so I was sneaky by adding cauliflower to my potato stuffing in these potato skins.
Made with Lean Turkey and lots of veggies hidden inside - my kids and my husband rave about it.
I love Rachael Ray's recipe for Turkey meatloaf so I decided to modify the recipe to make it into burgers and cooked on the grill - delicious! Especially after topping it with Grilled Pineapple, Turkey Bacon, BBQ Sauce and Mozzarella Cheese.
Found this recipe in Taste of Home Healthy Cooking magazine, but I left out one ingredient I felt was unnecessary (1/4 cup reduced -fat italien dressing) and used 1 cup of extra cheese. Calorie calculation does not include tomato, cilantro or lettuce garnish.
