Admittedly I was skeptical...someone gave me a bag of dried lima beans - not my favorite vegetable but I never had them dried and that's usually a huge difference in taste.
Ok - so is this a soup or is it lima beans and pasta? It started out as a soup but I wanted something more substantial and added dried brown rice pasta broken up so it soaked up all the yummy juices.
Chili variation uses lentils and TVP (optional) for texture.
Wheat free, vegan corn bread - feel free to add some 'fixings' like nuts, dairy free chocolate chips, fruit, etc.
Vegan white beans with sun dried tomatoes, sage, basil and spinach.
Wonderful pot of goodness gone in one night between the two of us!
Hummus made with sesame oil and sesame seeds, fresh lemon, garlic and cumin. Great with home made crackers or cut up veggies.
Wonderful Greek salad using roasted eggplant which can be roasted on the BBQ or in the oven.

A basic cake to add ingredients and experiment with different combination of flavors. Easy cake to throw together with just a bowl and spoon to stir.
Great sauce for over granola, cake, cornbread, in yogurt, in a crepe - go nuts with it... oooo nuts...!

How to disguise leftover veggies? Make a "cream" soup!
Use any type of vegetable - have fun! Broccoli, squash, pumpkin, etc. Quick and easy besides low fat - a winner all around! Can use fresh veggies but even easier using left over veggies - see notes.
Simple to make sauce - great over corn bread, with granola, in a crepe - endless possibilities!
Wonderfully delicious and simple to make cracker. Play with different flour / spice combinations besides the suggested ones.
This would work with any fruit and is creamy due to the addition of some coconut milk
Just your basic juice for a juicer - also added a green pepper, parsley and lemon.
Wonderful dish bursting with flavor - will make your tastebuds dance!! Carrots add a certain sweetness while the thyme adds such an indescribable flavor! Quick to make.
A cookie healthy enough for breakfast? You decide but for me this is a winner!! Who wouldn't eat a cookie for breakfast? :)
