My friend Kevin runs an Adult Day Program and every year they plant a garden. This is one of their favorite recipes for using up the bounty of fresh tomatoes they harvest.
First time I ever tried Dirty Rice this was the recipe. It's a little strange in that it had water chestnuts and mushrooms in it. I've even been known to add bamboo shoots. It's very tasty.

This is a breeze to make and oh so delicious. I use Publix Pie Crusts, you can find them with the biscuits. This recipe freezes well and tastes yummy reheated.
I used the recipe for Maragria Pie found on the Okios site and reduced the fat with the pie crust and cream cheese. I also used Truvia instead of sugar.

My family always made "pink junk" for holidays. I was recently talking to some friends about the variations they had on "pink junk". I was also really craving a banana split that day (we'd been traveling & I kept seeing the DQ billboards). Anyways, I decided to make a "pink junk" variation that tasted like a banana split. It turned out really good. Hope you like it.
This is a great low carb dish. Served with Indian rice It is very filling.
The basic recipe can be easily altered by replacing the chicken with chick peas or mixed vegetables.
