This is an easy recipe. I make these out of the nut meal left over from making hazelnut milk. Almond meal can also be used, and blueberries can be substituted when cherries are not in season. Not low calorie, but they are very nutritious and have 7.4 grams of protein.

This is a non-dairy version of this recipe. This is the best popover recipe I have found, these popovers are very eggy in flavor, and popped perfectly.

Steamed Vegetables, Rice and Tofu with Tom Kha Soup

Easy one dish meal, vegan. I used broccoli, cauliflower and baby potatoes (calories calculated for these), but you can use any vegetables you have on hand.

Chickpea Garam Masala with Spinach and Tomato

This is a simplified version of an Indian recipe. This gets better if you leave it overnight for the flavors to meld. I make it and put it with the rice in containers for my lunches.
It makes a nice lunch.

Lime Maple Glazed Tuna

Easy, healthy and delicious! This "glaze" could be used on many types of fish and taste good. You could use dijon mustard instead if you want more tangy flavor. Great served over a salad of greens or with couscous. I had it with mashed sweet potatoes and the flavors went well together.
