A really quick lunch to prepare, gets at least 3 protions of veg in, and tastes great.
When i make this for my family, i cut up all the ingredients (along with some additional less 'diety' options like salami) and serve all the ingredients separately, the kids have a great time creating their own tortilla
The combined flavours of Flat leaf (italian) parsley, olives, onions and lemons give this salad a fantastic authentic middle eastern flavour.
You could replace the cheese with Halloumi or any other middle eastern/greek/turkish cheese that you like. I use light to keep the calories down.
A meal that was taught to me by some turkish friends who were staying with us. It's really flavoursome, and can be eaten either as a starter (use smaller slices) or as a light lunch.
This recepie is a very much loved one in our wider family. My inlaws are completly unable to cook anything without spices, and this was the creation they came up with.
Also add tumeric (not an available ingredient)
