This are incredibly simple and surprisingly easy to make. Can be served as a side or an entree. Loaded with fiber & protein.

A quick salad that can be put together for lunch during the week. serve over salad greens with tomato wedges.
You can also omit the chicken and serve as a side dish with pork, chicken or fish.
A quick soup for a light meal . I made this with beef broth for more flavor.
This can be served over brown rice. It's great cooked a day ahead and reheated.
Saute chopped onion in olive oil. Add rinsed beans and spinach. Add chicken broth. Simmer for 1 hour. Garnish with fried chopped garlic and sour cream
