I throw this together when I need a low fat but high carb and good protein side dish for my lunch or dinner.
This is a "whatever's in the pantry/fridge" frittata that I like to make for easy, on-the-go breakfasts during the week. Usually it consists of bell peppers, mushrooms, a meat protein of some sort, and some cheese sprinkled on top.
This is a very easy side dish to prepare when you're pressed for time and didn't plan anything. Just keep a few cans of assorted beans in your pantry and have some fresh produce on hand, including lemons or limes for the vinaigrette/dressing. Meat and cheese are optional.
Dressing for SB Chopped Tuna Salad Phase 1
A very basic and light, but flavorful Vinaigrette.
I cannot claim credit for this. My friend Tammy came up with it on her own and I'm just documenting it for her. It's delicious and so good on chilly days!
The prep is quick and easy; you just combine the ingrediants in the morning and by dinnertime, it's done!
