Yummy and spicy! This recipe was a hit at work!
This has become my go-to meal when I want to lose a few pounds. Depending on the size of bowl you have, it only has about 125 calories per serving, and its SUPER filling. I can't believe something so good for me is soooo freaking tasty! I can literally eat this for every meal for weeks without getting sick of it! Trust me, I've done it. And it was so painless, and actually kind of nice to have to worry about what to make to for dinner (and breakfast, and lunch) every night.
After a friend made this for our Labor Day bbq, I begged him for his recipe. This is the most amazing potato salad you'll ever eat! Everyone at the party was raving about it and wanted the recipe and leftovers.
*UPDATE: Made this as tuna salad, and wow. Wow. Wow. Fantastic! Only things I did differently was to use one roasted pepper, one roasted poblano, and 1/2 of one roasted purple onion, and cut the recipe in half (didn't really want to make 3 lbs. of tuna!) Definitely a must-try!

A friend made her recipe for Mexican Rice when she came over for a barbecue. This stuff is D-E-L-I-C-I-O-U-S! Came out perfect, exactly like what you would get at a restaurant. Don't expect this to be the star of the show, its a side dish meant to compliment more savory main dishes.

So incredibly easy! For those of you who have ever eaten at Casa Ole', this is the recipe for their awesome green dip! I served this at a party recently and the bowl was practically licked clean, and my boyfriend who swore that he hated avocados couldn't stop eating it!

Absolutely delicious and so low in calories! I have this pretty much every day for a filling yet light lunch. This recipe can easily be changed around to suit your taste, add different veggies, meat, potatoes, etc. Just be sure to adjust nutritional information.
After searching for a while on AllRecipes.com to find the perfect chili recipe, I came across two that I couldn't decide between. So, I just combined them to make my own version! This chili has a medium spicy flavor that can be warmed up or cooled down pretty easily depending on your taste. And just remember, the longer you cook this, the better it will taste! Top it with shredded cheese, sour cream, green onions or corn chips for a little extra something, and calories : (
