This is my go to salsa recipe. It's all fresh veggies and it's not cooked, so maybe it's more of a Pico de Gallo. I chop every thing tiny, and on occasion I'll puree a part of it if I want more liquid. Adjust spices to your taste. I stated 8 servings for purposes of listing here, however you may eat more or less for a serving depending on if you add it to recipes, top baked potatoes or eat it plain with chips or veggies.
I had some veggies that needed to be used, so I just threw this all together, it turned out fresh and flavorful!
My favorite homemade potato soup. My mom always made it very simple, potatoes, onion, water and milk...I glorified it a bit. My dad always like it thin, so this is a thin soup. You can thicken it a bit by mashing some of the potatoes.
This recipe is something I threw together since I had a couple of cans of beans and a hunk of ham I needed to use. The sodium is high in the recipe from the sodium in both the beans and ham. No extra salt is added due to this.
I used my leftovers from the Rice Lentil Casserole to make this. The nutritional info will need to be adjusted for however much of the casserole is used. Use lower sodium products to reduce sodium level.
I've only made this once, and for me it was kind of dry. I suggest tweaking this with some added liquid. I'm going to use the left overs as the "meat" of some chili this week...yum!!
I had some extra green peppers sitting in my fridge that needed to be used, so I just threw this together. It turned out Great! I hope you enjoy it too!
The sweetness of the green peppers is a great compliment to the mild spice of the sausage. No additional seasonings are needed making this a quick, simple meal.
This is an easy dish to add your own flair to, just keep in mind additions will change the nutrition content. Also, brown rice can be substituted for the white rice. Ground turkey or beef can be substituted for pork, however remember that the seasoning from the dish comes from the already seasoned pork.
Red potatoes are great in this recipe since they are lower in starch than Yukon Gold or Russets, but you can use any potato you have on hand.
