This takes some time but I LOVE this recipe.
This recipe is really delicious, has the consistency of mashed potatoes but without the fat and carbs. It's also really quick and easy.
My mom always makes this for the holidays and it's a big hit. It's super easy to make and it tastes delicious! I have certainly folded it in to my own repertoire.

Indian style chicken kabobs. I lightened it up by using fat free yogurt and Pam instead of EVOO.
I lightened this up a bit by using brown rice and fat free yogurt. Besides that the recipe is the same.
I took Rachael Ray's recipe and lightened it up. I switched out boursin cheese for the laughing cow garlic and herb cheese wedges. I also substituted EVOO for Pam olive oil spray.
